Ca La Calma in Cala de Sant Vicent breathes a love for Ibizan cuisine. Ca La Calma, a family-run restaurant in Cala de Sant Vicent, is deeply rooted in authentic Ibizan gastronomy. So committed is the establishment to sourcing the finest local ingredients that owner Jesús Cardona proudly states he never visits the fishmonger. “We have two fishermen who deliver their daily catch straight to us: rotja, John Dory, grouper, dentex, or monkfish,” he explains. As a result, the menu may vary depending on the sea’s bounty. On stormy days, there is no fish.
With the fishermen’s catch, the chefs prepare traditional dishes such as bullit de peix or salmorra, alongside grilled or baked fish specialties. However, it is their rice dishes that have earned them fame across the island. Their seafood paella, mixed paella, and particularly the vegetable paella—made with produce from their organic garden in Santa Gertrudis—have established Ca La Calma as a benchmark for rice dishes in Ibiza.
Meat lovers are also catered for, with premium cuts from two high-quality cattle breeds: Rubia Gallega and Retinta. These are flown in weekly from southern Spain to Cala de Sant Vicent, ensuring the utmost freshness and quality.
For those with a sweet tooth, the homemade flaó—a traditional Ibizan dessert—is a must-try. Another local favourite is their rustic pan payés toast, made in the traditional way using a wood-fired oven. These toasts, paired with toppings like tomato, cheese, ham, avocado, or sobrasada, delight breakfast diners at Ca La Calma.
At this establishment, everything from the slowly prepared toasts to the rest of the menu is crafted with care and without haste. Their philosophy embraces proximity, with most ingredients sourced locally or carefully selected for their exceptional quality.
