Cielito, the new signature Mexican restaurant by O Beach, has officially opened its doors atop the Bonito Ibiza Hotel, offering a captivating culinary journey inspired by Mexico’s rich culture and bold flavours. Perched on the rooftop of this newly opened hotel in the bay of Sant Antoni, Cielito invites guests to savour the essence of modern Mexico while taking in sweeping sunset views over the Mediterranean.
The restaurant boasts a contemporary design aesthetic inspired by modern-day Mexico, a vibrant celebration of flavour, culture, and style. Thanks to its prime location, Cielito is also the perfect setting to enjoy one of Ibiza’s most iconic sunsets.
Cielito’s cuisine combines authentic ingredients imported directly from Mexico with traditional techniques and recipes, crafting a menu that reflects the depth and diversity of modern Mexican gastronomy. This culinary experience is complemented by an expertly curated selection of signature cocktails, each thoughtfully created to enhance the bold and varied flavours of the menu.
The menu, inspired by Mexican art and cuisine, pays homage to fire, flavour, and sophistication. The journey begins with starters that fuse tradition and creativity in small, flavour -packed bites- such as crispy handmade corn elotes with fresh guacamole or tangy esquites infused with citrus and chilli, alongside Mexican staples like enchiladas and quesadillas.
Variety of ceviches and aguachiles
Next, the coastal influence comes to life through a variety of ceviches and aguachiles, where lime cures, chilli awakens, and the sea is transformed into art. Highlights include the punchy red prawn aguachile, sea bass ceviche cured with serrano chilli, and the vibrant seafood ceviche, offering the freshest catch and the unmistakable taste of the ocean.
Of course, no Mexican menu would be complete without tacos, true icons of the country’s culinary heritage. From fresh seafood tacos with garlic, chilli, and lime, to the rich, slow-cooked cochinita pibil, Cielito’s taco selection is both diverse and deeply satisfying.
As the menu unfolds, the main courses reveal the heart and soul of Mexican cooking. Dishes such as “petrolera” prawns, beef ribs in mole, zarandeado-style sea bass, and the show-stopping Tomahawk “El Guerrero” are rich in character and flavour, designed to impress and satisfy.
Desserts at Cielito are an irresistible finale, offering a medley of textures and tastes—from mango sorbet with chamoy sauce and cacao nibs, to tres leches cake, Oaxacan chocolate textures, and traditional churros with dulce de leche.
The experience is elevated by a bespoke cocktail menu, expertly crafted to harmonise with the flavours, aromas, and textures of each dish. All of this is served with breathtaking views of the Mediterranean, making Cielito not only a gastronomic destination, but a feast for all the senses.
