Juntos House is a project of principles, of very deeply rooted values based on respect and devotion to the environment. This restaurant, located in the heart of Sant Mateu in Ibiza, reflects a philosophy of life: to provide without destroying.
An old, completely refurbished Ibicenco farmhouse is what diners are greeted with every evening in the restaurant Juntos House. You can either sit in one of the interior rooms or on the spectacular terrace (highly recommended for dining under a starlit sky). Whichever you choose, the gastronomic experience will be memorable.
The underlying concept here is ‘from farm to table’, with an immediacy that is surprising. That’s because between Santa Gertrudis and Sant Llorenç, Juntos has 70 hectares of farmland where the majority of the fruit and vegetables used in the kitchen are cultivated. Therefore, its proposal is firmly seasonal. The chef patiently awaits the arrival of new products and knows how to phase out those which are no longer in season with a mastery that the diner perceives in each choice.
«The cuisine is modern Mediterranean,» affirms Juntos House, highlighting in each season (they are open all year) the dishes that are adapted to the produce available. Without urgency. Waiting for the right time to harvest the products and respecting their rhythm. «Right now, for example, we have tomato gazpacho, fried aubergine, courgette flowers… Every is simple but oh so tasty,» the restaurant adds.
Regenerative agriculture
Regenerative agriculture is the main focus for the crops at Juntos House. The entire farm is organic, in addition the fish are wild (they don’t originate from fish farms), and to obtain quality meat, Juntos House works with organically certified suppliers. Everything is aimed at offering «very healthy food». «When we can’t source a particular product on the island, we seek it elsewhere, but always following the organic route,» Juntos House confirms.
The rich natural environment of Ibiza inspires the dishes at Juntos House, but they also offer an interesting selection of cocktails on La Pérgola terrace. «The cocktails have been conceived with the same ethos as the food, we use our own fruits and infusions with the rosemary, sage and lavender etc., all sourced from our farm». Aromatic plants are very present in all areas of the restaurant.
Apart from the food on offer at Juntos House, visitors can also browse in the Juntos Boutique, a shop with an Ibizan and Mediterranean inspired flavour. There you can find products such as perfumes, candles and clothes where the origin of each item is explained to guarantee they are locally sourced. They also sell products like their delicious home-produced honey.
